#1: Bayley Hazen Blue

Made by Jasper Hill Farm of Vermont, Bayley Hazen Blue was voted the “World’s Best Unpasteurized Cheese” at the 2014 World Cheese Awards. This cheese is 100% a masterpiece of Jasper Hill. The milk comes from the farm’s Ayrshire cows. It is made into cheese at their creamery and then transported to the blue cheese vaults in their cellars for “affinage,” which is the final stage of cheesemaking.

Short and stout in stature, Bayley Hazen Blue is big, bold and boisterous in flavor. Encased in a soft, natural rind, the paste is slightly drier than most American-made blues. The wheels are bursting with deep, dark flavors that often hint at tobacco and roasted hazelnuts, and on rare (and lovely!) occasions, sweet black licorice. Distinct and robust, Bayley Hazen Blue is sure to make a statement on any cheese plate.

Red Dragon – also called Y Fenni – is a Welsh Cheddar cheese made with Welsh brown ale and wholegrain mustard seeds. It takes its name from the dragon symbol on the Welsh flag.

The moist yet firm Red Dragon is aged for 3 months and made from pasteurized cow’s milk and vegetable rennet. The mustard seeds not only give it a unique texture but also an amazing buttery and spicy flavor.

Along with the subtle sharpness of mustard seeds, the flavor of Red Dragon is also reminiscent of the mild, sharp taste of the Welsh ale and traditional cheddar. Some say the taste of the cheese is very similar to sharp cheddar.

Serve Red Dragon with dark ale or try a strong red wine. It is an excellent table cheese that melts well on a sandwich… in our case, it melted well on an amazing burger!
